Today MR and I both worked from home. Because of that, I had the time to make something especially yummy for supper. We went with mac and cheese and also mock chick-fil-a nuggets. Talk about your comfort foods!

I did not take the time to marinate for an hour (just let them marinate while I mixed together the dry ingredients).
The macaroni and cheese was adapted from Better Homes and Gardens cookbook
Clean Eating Mac and Cheese
1 cup whole wheat pasta (shells or elbows)
1 T butter
1/2 cup chopped onion
1 T corn starch (or other thickener)
1-1/4 cups milk (I used cow's milk, but you could probably use almond or soy)
1-1/2 cups cheese (I like to use sharp cheddar)
Cook pasta as directed. While that's cooking, melt butter in saucepan. Add onions and saute until tender. Mix in corn starch. Add milk all at once. Cook and stir until thick and bubbly. Add cheese and continue to cook until cheese is melted. Drain pasta and stir into cheese mixture. Transfer to a baking dish. Cook uncovered at 350 for about 30 minutes. If desired, garnish with tomato slices and bake 5 more minutes. Remove from oven and let stand about 10 minutes.
