The Best Part of Clean Eating.... Dessert!

I am not going to kid you, if it weren't for clean eating desserts, I probably would not have stuck with this lifestyle for the last two years.  Knowing I could have occasional treats was what really got me started.  Like most people, I don't want to feel deprived.  That's no fun!

I continue to see lots of "super easy" minimal-number ingredient recipes all over Facebook, Pinterest, everywhere.  But so many of them start with a cake mix or something else equally sugar filled.  How much better to have a sweet treat and know that you haven't completely derailed your progress??

As with any treats, moderation is important.  But, still....  nice to have options, isn't it?

Here are some awesome summertime treats.  Some are super easy, and a few take a little time... but are so very worth it!


First, my very favorite (but admittedly time consuming) gourmet s'mores!!!  I like to make these ahead of time and store them in the refrigerator until the backyard barbecue.

You can also make these in stages as you have time.  The graham crackers can be made and stored until you have time to make the marshmallow.  And who would have thought you can make your own marshmallow!?  This is when it comes in handy to have a good stand mixer, but a hand mixer will do also.

Blueberries and creamsicles!  A wonderful summertime treat for you and the kiddos in your life.  Make ahead and have them in the freezer for those run-through-the-sprinkler kind of days!

Mint chip ice cream - And this one is Paleo, too!

Lemon ice cream with blueberry coulis - A little fancier but still so yummy!

And for the raw eaters among us, some super easy, super quick tasty treats!
Raw Thin-ner Mints and also includes a recipe for Something-Like-Samoas!
Mexican chocolate brownies!  That first bite will make you wonder if they are really raw!
Coconut truffles (Paleo too!)

Service not Self

Let's stop talking about food for just a moment.  I want to share with you a new project being undertaken. It's called "Images of Impact."  Instead of taking "selfies" and posting them all over social media, people are to take "servies" of themselves.  A servie is a picture of you doing service for your community.

Wow.  What a concept!  And how awesome would it be if for every selfie we see posted on Facebook, Instagram, etc., we saw a servie.  We could change the world.  Or at least our community. I'm pretty excited about this project and hope you will share it with everyone you know.  Even if you just do one servie a week (as opposed to several selfies a day, let's be real), you can be part of this world changing project!

Recipes.. Including Chocolate Mousse!

It's been a while since I wrote a post.  It certainly hasn't been a while since I ate something clean or made a new recipe.  It's just been a little busy around here.  This beautiful weather is keeping me outside too!  Today was no exception.  We did a 10-mile round trip bike ride with a leisurely stop in the middle of it for a wonderful lunch.  We sat outside and took our time enjoying our meal.  A great way to spend some time.  I have been logging a fair amount of miles walking too.  Just 1-1/2 miles at a time most times, but they add up after a while!  But every step counts.

We are coming into a holiday weekend but before we get to some great summertime recipes, let's see what we can put together this week just to keep me going until the weekend!

Marinara sauce with whole wheat pasta and a salad

Pizza - Trader Joe's whole wheat crust, their Quattro Fromaggio cheese, and your favorite toppings!

Grilled chicken and salad - We just rub chicken breasts with olive oil and sprinkle on Italian seasoning, a little salt and pepper, and it's ready to grill.  Make your salad the way you like it!  Ours usually depends a lot on what happens to be in the crisper.

Rosemary pot roast - This isn't exactly a summertime dish, but I will be home so can throw this in the crockpot in the morning and have it ready when MR gets home.  Friday is farmer's market night, so I like to have something ready to go so we can get to market!

Southwest quinoa salad, maybe wrapped up in whole wheat tortillas!  Plus this makes a fair amount and I can eat it for lunch for a few days.

If I make a treat, it's usually something raw.  Mostly because a lot of those recipes can be made in no time.  My new favorite is chocolate mousse.  Which is also vegan, if you're into that.  I found it at My Whole Food Life.  (She really does some awesome recipes!)  So this week's yummy treat:

Chocolate Mousse
1 ripe avocado
1/4 cup cocoa powder
1/4 cup agave (I use honey)
1/4 cup almond milk (I didn't have any so used coconut cream)
1 tsp vanilla

Puree!  Put into dishes and chill.  Eat!!!!!

Better Not Lay a Finger on My Butterfinger!

Someone shared a raw (and vegan, if you roll that way) butterfinger recipe with me this week.  I can hardly wait to try it.  I have to stop at Whole Foods first, though, because apparently unless I order online that's the only place I can get dried white mulberries.  If these are as good as the blogger claims, I might have to just buy a mulberry bush!  Other good stuff this week too!  Check out the recipes below:

Raw vegan Butterfinger - Seriously!  What is not to like?!

Garlic Olive Oil Pasta and a salad.  I will make this with whole wheat pasta.  What could be easier?  This is stuff I typically have in the kitchen so that's cool too.

Lime cilantro chicken with vegetable.  I have made this before.  Another easy one.  Are you sensing a pattern here?

Grilled cheeseburgers.  We are scheduled to get our beef in a couple months so I have to use up last year's.  I try to spread it out so we have enough for the whole year, but then I always end up having a bunch left this time of year.  Not a bad thing since it's now grilling weather!

Sundried tomato (paleo) meatloaf.  I love the flavor that sundried tomatoes gives foods, and this is no exception.  I even sneak in the mushrooms and no one seems to be the wiser, as long as I use fresh.  My family is kind of picky like that.


Mini quiche - I am going to make a bunch of these so I can take them to work and heat them up for breakfast.  Super versatile!  Just add what makes you happy!
